What is a Aebleskiver?
If you are reading this article, I hope you know what it is. If not, aebleskiver or ebleskiver is an apple filled danish snack. They are traditionally eaten at Christmas and Easter season. Often served with a side of Glogg, a Scandinavian mulled wine. Today, they are eaten with both in savory and sweet varieties. While apple was the original form, they are now often dipped in raspberry strawberry or even blackberry Jam.
Another similar dish would be the Takoyaki balls found in Japan. A takoyaki is a round ball with some octopous inside. They usually cover it in Mayo and Bonito flakes. It is a very popular in Japan. Although it is a little smaller than a ebleskiver, you can still make it in the same pan.
What to Look for in a Aebleskiver Pan
Material and Construction
This is probably what will affect cooking the most. There are two main variations. Nonstick and Cast Iron. One of the most difficult thing about Aebleskiver is known when to flip it. Do it at the wrong time, your Aebleskiver will tear and get ruined. With a nonstick pan, this is a lot more forgiving. Since the batter wont stick as much, it gives you a lot more wiggle room. Nonstick pans are also usually a lot lighter than cast iron.
On Cast Iron pan, it becomes nonstick with use. However, it is never as good as Teflon. For that reason, you need to be sure that it is ready when you flip. However, cast iron does not use a teflon coating. This means that it will last pretty much forever. Where as the nonstick pan will probably last one or two year.
Diameter Size
The size of the diameter is also another thing to consider. How big do you want your Aebleskiver? Some pans are 3 inch, while others are at 2 inch. It really depends on how you want to serve it. Bigger Aebleskiver will take a longer time to cook, but it also takes more filling. It really depends on the type of Aebleskiver you want to make.
Handle
Since you wont really be tossing and turning the pan. The ergonomic of the pan isn’t that important. What is important is the material. While I personally prefer an all metal handle that is molded onto the pan. Some prefer a plastic handle that wont get hot.
Electric Model
Electric models are great for making Aebleskiver on the go. Sometimes you want to entertain your guest and make it on the table. These electric model are the perfect way to go. We don’t always have a portable gas stove with us.
Lodge Aebleskiver Pan (Best Overall)
Categories | Lodge Aebleskiver Pan |
---|---|
Performance | Excellent |
Country of Manufacturer | USA |
Material | Cast Iron |
Compatibility | Gas, Electric, Halogen, Glass Top, Induction |
Aebleskiver Size | 3 1/4 inch |
Shape | Lodge Aebleskiver has one of the largest diamater Aebleskiver. At 3.25 inch, you should be able to load up on the strawberry or apply jam. The bottom of the pan is round so you should be able to get a perfect sphere. | Handle | The handle is molded when the pan is made. This means that its the same piece as the pan. It will not get loose overtime like the plastic one will. The only downside is that it gets really hot on the stove. |
Price | One of the more expensive model. However, they are made in USA and Lodge guarantee it for life. It is highly unlikely that this pan will ever break. |
Thoughts | A traditional Aebleskiver pan. The cast iron design means that it will get better with use. It is also heavy and hold on to heat, this means you can keep on cooking without pausing. |

Nordic Ware Ebleskiver Pan
Categories | Nordic Ware Aebleskiver Pan |
---|---|
Performance | Great |
Country of Manufacturer | China |
Material | Aluminum with Teflon |
Compatibility | Gas, Electric, Halogen, Glass Top |
Aebleskiver Size | 2-1/4-inch |
Shape | Another spherical Ebleskiver shape. The diameter of the Ebleskiver are a little smaller than lodge, but that means it cooks faster. Other than that, its not that much different from the rest. | Handle | The handle is made of plastic. It has a slight taper that is meant for ergonomic. The plastic design also means that it wont get hot overtime. However, if you use it regularly, the screw can become loose. I recommend tightening it once in a while. |
Price | Fairly affordable. However, it wont last as long as a full cast iron model. The nonstick coating might last a year or two before you replace it. If you only use it once in a while, it can last your lifetime. |
Thoughts | The nonstick coating means that it is easier to use than the cast iron equivalent. If you only plan on using this sparingly, it can last you a lifetime. However, if you plan on making this daily, stick with the cast iron. |

Overall, this model lets you cook a lot more thing than the other pan. | Handle | No handle, I recommend that you use a glove when handling it. For flipping the pall, I would use a long wooden pick. |
Price | A little bit more expensive than the nonstick model. But this is electric and you get more molds and versatility. |
Thoughts | This model is great if you want to serve guest. While I personally like the stove top model, there is a place for this. It also makes as a great alternative stove for when you go RVing. Because its an electrical appliance, I don’t expect it to last as long as the other models. |

December 18, 2020 at 9:22 pmOh no! Cooking aebskeiver in a teflon pan is a sin. Vikings killed for less. Cast iron is the only way to go. It cooks evenly, crisps the outside leaving a pillowy inside with or without filling.
Don’t buy Chinese teflon for a scandi classic. A cast iron pan that is seasoned does not stick and will last beyond a lifetime.
