What is Actually Fully Cladded
In a typical fully cladded cookware, different metal are bonded together. They take advantage of the best properties of different metal. For example, Stainless Steel does not stain nor does it react with food. However, stainless steel are bad conductor of heat. To get around this, they would use a aluminum core to improve the head conductivity of the cookware. However, it is reactive so they need to use the properties of stainless steel. Handle
The handles are horrible. For whatever reason, they decide to make their cookware similar to that of All Clad. The two sharp edges will dig into the palm of your hand causing discomfort. While it might not be bad at first, overtime, your hand can become sore. There are positive to this design though. It ensures that it has a superior grip when you are pouring. Rounded handles are more comfortable than this multiclad design but they can rotate in your hand.
Aside from that, the handle is stainless steel and it stays cool to the touch. The base has a little heat choke to prevent the transfer of heat. On the stove top, you shouldn’t really have to worry about it. However, if you plan on cooking in the oven, be aware that it will get hot. Another positive thing about this all metal design, is the oven safe temperature limit. Cuisinart Multiclad Pro has a limit of 500 degree Fahrenheit. Cookware with silicone handle usually maxes out at 400, limiting the versatility.
Shape
The shape of the cookware is pretty well designed. The skillet resembles that of a french skillet. However, the biggest issue with this design is how high the sidewall is. It makes it difficult for new cooks to flip food. A spatula has less clearance to reach under it. More experienced cook should be able to flip the food with the wrist. The other downside is that higher sidewall slows the evaporation of liquid. Since steam collects on the walls, more of it will condense to the food.
For the pots, it is a standard pot shape. One of it is narrow that is great for boiling liquid. The other is more wide and resembles that of a saute pot. These type of sauce pot are actually better. You can sear food more food in a single batch. Other than that the stock pot and the saute pan are standard. I will say that stock pot is a mix between dutch oven and a traditional stock pot. Whether this is good or not is dependent on you. All in all, the 12 piece cookware set should let you cook just about anything you would at home.
Lids
The lids on this set is all metal. These are great as they basically last forever. Glass cookware are great because you can see in initially. However, once steam start to form you cant see in either way. For that reason, it is pointless. Also they lack the durability of metal. I really would not like glass shattering onto my food.
Induction Capability
This questions gets asked a lot. For a cookware to be induction capable, it needs to have a strong magnetic pull. If the pan does not have the pull, it will not be induction capable. Luckily, the stainless steel exterior provides a sufficient draw. If you want to see if a cookware is compatible, all you need to do is use a magnet to test it.
